This recipe for tomato chutney originally calls for green tomatoes but it works exactly the same with red tomatoes so you can use either. Again it follows my preferred taste of slightly sweet, tangy with a little kick of spice and is a great gift with Christmas around the corner and the copious amounts of cheese that will be eaten.
You'll need:
- 500g green or red tomatoes
- 500g red onion
- 250g sultanas
- 250g brown sugar
- 2tbsp salt
- 1tsp cayenne pepper
- 500ml malt vinegar
1) Chop tomatoes and onions roughly and add to a heavy based saucepan with the red of the ingredients.
2) Bring to the boil and then turn down the heat. Simmer for about an hour until reduced to a thick pulp consistency.
3) Allow to cool slightly before spooning into jars.
3 simple steps = Chutney glory.
